His and Hers Guacamole: Mario Lopez and His Wife Share Their Go-To Recipes

Extra host Mario Lopez and his wife, Courtney, are gearing up for America's biggest game day by sharing their favorite guacamole recipes, using Avocados From Mexico. Lucky for us, the recipes are unusual riffs on the classic avocado mash. Mario's is spicy and smooth with the addition of serrano peppers and olive oil. And Courtney prefers a milder guac with crumbled feta. We caught up with the pair, who explained how they came up with these unique takes: "We make guacamole all the time and just get creative. Avocados are a staple in our house, and we're always hosting parties so we're always making guac . . . ," Mario said. And the guac isn't just intended for dip! Courtney says one recipe always on rotation in her household is slow-cooked pulled pork or chicken. Use the meat to fill sandwiches or tacos and the guacamole as the spread.

Though their recipes are different, Mario and Courtney can agree on one thing: nothing pairs better with guacamole than tequila. Mario recommends Casa Mexico. Courtney also recommends whipping up a big batch of red sangria for a crowd.

Feta Cheese Guacamole

Feta Cheese Guacamole

Ingredients

  1. 2 ripe avocados, halved, pitted, peeled, and cubed
    1/4 cup onion, finely diced
    1 teaspoon fresh garlic, minced
    1/2 cup feta cheese, crumbled
    1 tablespoon cilantro, finely chopped
    Lime juice and salt to taste

Directions

  1. Very gently, combine all ingredients in a medium-size bowl for a chunky guacamole.
  2. Pair with corn or pita chips.

Ingredients

  1. 5 ripe avocados
    3 Roma tomatoes, seeded and diced
    1 serrano chile, finely diced
    3 cloves of garlic, chopped
    1/2 cup chopped cilantro
    Juice of one lime
    3 tablespoons extra virgin olive oil
    Salt to taste

Directions

  1. Cut the avocados in half and remove the pit. Using a spoon, remove the flesh from the skin.
  2. Using an old fashioned potato masher or large fork or spoon, mash the avocados into a coarse puree (or consistency to your liking). Add remaining ingredients and mix well. Season with salt and taste, then mix a little bit more to combine thoroughly. All ingredients can be adjusted to suit your taste.
  3. Pair with corn chips.
