2 balls of pizza dough
12 ounces fresh lamb sausage, cooked
5 ounces grated mozzarella
2 ounces feta cheese
1 teaspoon chopped mint
1 teaspoon chopped Italian flat parsley
- Preheat a pizza stone placed onto the bottom rack of a 500°F oven for at least 30 minutes.
- Roll out the dough on a floured pizza peel to 1/4 inch thickness. Spread some of the romesco sauce onto the pizza leaving a 1/2 inch border.
- Top with the cooked lamb sausage and the cheeses. Slide onto the pizza stone and bake until golden brown.
- Top with some of the mint and parsley. Slice and serve immediately.
