This is the kind of cocktail that should probably come with a warning. It is extremely refreshing and very, very potent. Unlike the Long Island iced tea, which contains no actual tea in it, this contains coffee, so remember that if you consume it late at night. If you can't find (or make) cold brew coffee, substitute with cola but leave out the ginger beer.
Long Island Iced Coffee
1 tablespoon dark rum
1 tablespoon vodka
1 tablespoon gin
1 tablespoon Patrón XO Cafe (can substitute gold tequila)
1 tablespoon Tia Maria or Cointreau
1-2 tablespoons lime juice, to taste
2 tablespoons ginger beer
Cold brew coffee, to top up
Lime wedges, for garnish
- Fill a tall glass halfway with ice.
- Fill a cocktail shaker with plenty of ice and add all the spirits and the lime juice. Shake until chilled.
- Strain over the ice in the glass. Add the ginger beer and cold brew to top up, and stir. Garnish with lime wedges and serve.
Notes: Taste this for sweetness — without the cola it may need a tablespoon of simple syrup if you prefer it a little bit sweeter.
