Lox

Definition: Lox

Lox
A cured salmon fillet that is usually sliced super thin. It is most typically served with cream cheese on a bagel. The term is derived from the German word Lachs in German and laks in Yiddish, both meaning salmon. It's traditionally cured in a brine of water, oil, salt, sugars and spices.

my mother is from norway, and we eat fish all the time. I grew up eating pickled herring and bagels and lox for breakfast. i still love lox, on an onion bagel, a smear of cream cheese, a slice of onion and capers.

WildHeaven: Nova lox refers to the <a href="http://www.foodreference.com/html/fnovalox.html">origin of the lox</a> which traditionally meant from Nova Scotia. Technically cured meats are not cooked because cooking requires a heat process but it's been preserved, brined, and salted giving it a more flavorful taste.

oh man...i had never heard of this before I moved to NY. I'm not a salmon person and just looking at that picture makes me feel sick. Is it really that good?? Can a non-salmon lover enjoy it?

Okay, got the lox part down, but what does the "nova" in nova lox mean?I like it on a Wheat Thin with garlic cream cheese. Last time I served that as an appetizer, my fairly un-foodie family only wanted to know if it was raw fish. Gave me pause. Is it raw or can it be considered "cooked" because of the cure?
