Manchego

Definition: Manchego

Manchego
A type of sheep's milk cheese native to the La Mancha region of Spain. It is Spain's most popular cheese is pale in color with a waxy rind and is usually sold in cylinders or wedges. It's a semi-firm, rich cheese with a mellow to sharp flavor depending on the age. The most commonly exported cheese is aged 3-4 months and is known as curado, while the older kind is called viejo. Great for snacking and melting.

Viva España! :D looove my queso curado..at tapas bars it's sometimes conserved in olive oil, and best eaten as a tapa with piquitos (short bread sticks), fresh bread, jamón serrano (kinda like prosciutto), spanish green olives, and a nice glass of wine or a cold beer...*drools*

I love manchego. I make a creamy polenta with spinach and manchego that is just fabulous.

Manchego is also one of my favorites! If you like this cheese, also try Dutch Parrano or Old Amsterdam.
