Monday's Leftovers: Pulled Pork Burritos

If you followed Brian's pulled pork recipe yesterday, you probably (unless you pigged out like I probably would've done) have some leftovers for today. If that's the case, then take a tip from our very own Sugar Network geeks and put yourself together a delicious pulled pork burrito. This burrito is simple to put together - take a large flour tortilla, fill it with pulled pork and beans (I forgot to ask which kind the geeks used), cilantro and cheese - then top it with cheese and heat it up in the microwave (or oven) until everything is nice and warm and the cheese on top is melted. Depending on your microwave, you may want to heat the pulled pork up a bit before putting it in to the tortilla. Oh and don't forget to garnish the whole thing with a bit of fresh cilantro and some fresh salsa. Doesn't that bit of green just pull the whole thing together?!

me too sticky!! omg :drool: OR i'd eat it with a salad. OR being totally chinese, i can eat it with white rice! haha, seriously, EVERYTHING goes with white rice!

:DROOL: That looks soo GOOD! The only difference I could think of between a burrito and an enchilada is that a burrito is usually made with a flour tortilla and an enchilada is usually made with a corn tortilla. Either way, that burrito/enchilada looks delicious!!

i don't know the difference between an enchilada and a burrito. to me, if it is rolled up, its a burrito. the beans were canned baked beans that we had left over from the sandwiches the day was VERY good!!

I'd probably pick at it cold, straight out of the refrigerator, until I made a burrito out of it. Or a taco.

crispet - you're totally right it does look more like an enchilada, I think it sort of came out as a hybrid of the two.

I would prolly just eat it with some coleslaw smack dab on top and perhaps some corn bread. i am not against eating the samet hing for 3 days, esp if it is that good! _________________________________________________________ Why don't you wear the face you have when I am not around?
