Is It OK For Chefs to Yell at Their Staff?

Yesterday the Internet food world was in a tizzy over an article that was published on the New York Times food blog Diner's Journal. The story, Why I Got Kicked Out of a Restaurant on Saturday Night, recounted how the writer had been asked to leave a fine dining establishment. Turns out he (and the rest of the diners) over heard the chef yelling at his staff, multiple times. It made him feel so uncomfortable that he walked into the kitchen and confronted the chef! The recount was interesting because it brings up the question: when is it OK for a boss to yell at their employers? Apparently it's perfectly acceptable in a kitchen. What do you think about the matter?

I don't think its appropriate to yell at anyone let alone for a boss or person in power to yell and berate employees - no not at all acceptable.

Yes! What Roar said. Yelling (and berating! and vulgarity!) is a given in this line of work. I do agree, however, that the chef should not have been so loud and disruptive in his yelling.

The most inappropriate thing in this story is the customer going into the kitchen. Bottom line is chefs/kitchen staff yell and swear, a lot. It's hot, it's busy, they've worked extremely long hours. If you watch any show like Top Chef or Hell's Kitchen, there are lots of tempers flaring, lots of swearing. As with anything, I'm sure there are exceptions. On the other hand, I think the chef shouldn't have yelled so loud that it disturbed the diners. He might not have even been awareof how loud he was. The customer should have alerted one of the wait staff.

jmorri -- I think yelling to be heard is different than being yelled at by a boss.

Maybe it's regional, as I've worked in a kitchen and have several friends who have working in multiple kitchens and when we were discussing this issue, none of us thought it was acceptable for the boss to yell at his subordinates. To me, raising one's voice in order to be heard properly is different than yelling at someone.

If you worked in a kitchen, you'd understand. Yes this is acceptable. It's not personal and no one takes it that way. You stand in front of muggy heat, knives too many people in a small space and clanging plates for a dinner shift and see if you're not yelling too. Granted, should the customers been able to hear, no. But this is just how it is in most (I'm sure not all) kitchens.

No, particularly not when customers can hear. That being said, it's also not OK for a diner to go into a kitchen and yell at a chef.

Yelling is never appropriate and will just cause more the help to not really care about how things are done.

agree with yum, it's no more okay than if a boss in an office yelled at their employee plus, if the restaurant guests can HEAR, that's even worse!

I don't think so. If it's not okay for any other setting, why should it be okay in a kitchen?
