While the pungent fermented cabbage will last several weeks tightly sealed in the fridge, it will eventually expire, and boy, you don't want to be around when it does! Chopped kimchi and its fragrant juice make an amazing dressing for fried rice, and it can be prepared in 30 minutes or less!
