I just got back from Belize and fell in love with the coconut pineapple rice that this one restaurant served. Luckily on our last day there I was able to pry the recipe out of the chef. It's super easy, and low in fat. I generally pair it with bacon wrapped shrimp in a pineapple rum glaze. Use jasmine or basmati rice and substitute 1/2 of the water with coconut milk. For a lower fat option use low fat coconut milk. When the rice is finished add a 1/2 of chopped pineapple (use fresh not canned pineapple if possible), and a tablespoon of fresh chopped cilantro. I also add 1 thin slice of fresh garlic or a dash of garlic powder, a dash of cumin, and a small pinch of salt (very small).
