INGREDIENTS
- For the chili:
- 2 sweet potatoes, peeled and chopped
- 1/2 onion, diced
- 2 cloves garlic, diced
- 1 (28-ounce) can crushed tomatoes
- 1 (15.25-ounce) can white beans, drained and rinsed
- 1 (15.25-ounce) can kidney beans, drained and rinsed
- 1 (15.25-ounce) can black beans, drained and rinsed
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 1 (1.25-ounce) packet chili mix
- 2 cups vegetable stock
- For the toppings:
- Sour cream
- Crumbled tortilla chips
- Lime slices
- Shredded cheddar cheese
- Avocado, chopped
INSTRUCTIONS
Add all ingredients to your slow cooker and set to high. Cook for 6 to 8 hours, or until the sweet potato is fork tender.
Top with your favorite toppings, such as sour cream, shredded cheese, fresh lime, and avocado.
