Case in point: this smoked mozzarella spread. It's meatless, mind-bogglingly easy, doesn't require cooking, and only calls for four ingredients. And with its smoked and sun-dried elements, this dip and spread appeals to both the brainy as well as the brawny.

Ingredients

  1. 1 pound smoked mozzarella, coarsely chopped
  2. 1/4 cup extra-virgin olive oil
  3. 3 tablespoons sun-dried tomatoes, chopped
  4. 1 tablespoon chopped parsley
  5. Salt and freshly ground pepper
  6. Flatbread crackers, for serving

Directions

  1. In a food processor, combine the mozzarella, olive oil, and sun-dried tomatoes and process to a coarse paste.
  2. Scrape into a bowl. Stir in the parsley and season with salt and pepper; enjoy alongside flatbread crackers.

Serves 10.
