Squid Ink Dishes: Love Them or Hate Them?

During this week's SF Chefs 2010, chef Matt Accarrino demonstrated how to make squid ink pasta. Many Italian restaurants serve pasta made with squid ink, which has a blue-black tint. In addition to being a natural way to color foods, the cephalopod's ink also lends dishes a distinctively briny flavor. Do squid ink dishes creep you out, or are you a fan?

This is probably a dumb question, but you have to kill the squid to get the ink right? Or otherwise do something harmful to the squid? If not... maybe I'd try it?

I would try it if I could, but I wonder if the ink would trigger the same allergic reaction that actually eating squid would? My guess is yes, so it's off-limits for me. I think the color looks so interesting and strangely appetizing!

First off I am a vegetarian with certain allowances (some organic mac and cheese or ice cream) however I could not and would not eat a dish with squid ink. For natural coloring, use spices, beets and berries; leave the little squid alone.

There's a Filipino dish that cooks squid in its own ink and it takes a lot of willpower to get me to take a bite (I love my nana and don't wanna make her sad :D). When I do though it's actually not half-bad. It's just hard to take the plunge 'cause we eat with our eyes first.
