A Tempeh Take on Banh Mi

What's your take on tempeh? Between the Bread [1] tries the vegan product in a bánh mì [2] and is surprised by the results.

The first time I encountered tempeh, I was a high-schooler venturing trepidatiously into a vegetarian restaurant in Atlanta, and the soy patty sandwich blew me away.

Since then, I have never had tempeh that impressed me much, until this tempeh banh mi at Urban Picnic [3]. The protein is savory, spiced, and layered with flavor, like a good marinated meat.

Yesterday I went back to UP and tried the lemongrass chicken banh mi, which is also remarkable, but I think the tempeh may actually be better. Both bounce with lemongrass seasoning on a po'boy-worthy French bread with sriracha aioli, pickled carrots, jalapenos, cilantro, and crispy shallots.
