Vegetarian Casserole Suggestions?

Readers, Advah needs our help! She recently asked the following question to the YumSugar Community:

I bought this gorgeous Le Creuset heart-shaped casserole dish (beautiful, right??). I absolutely love it, but I'm actually not sure what to use it for, since it only goes in the oven and not on the stove... Would you have any suggestions for vegetarian meals that could be cooked with the lid on?

I'm thinking she could make a braised bean dish or a hearty vegetable stew. Vegetarians: what are your ideas?

This is one of my favorites: http://thebananahammok.blogspot.com/2010/05/leek-bean-cassoulet-with-biscuits.html You can cook it in a regular pot/pan on the stove, then transfer it to the oven for the biscuits.

Thanks so much for the suggestions! I was very confused as to what dish would not require sauteing stuff in the dish first, and I'm rubbish at making casseroles..

Oo I agree with the ratatouille suggestion! I just made it on Sunday from the recipe in this month's Everyday Food - it's extremely tasty! Even my vegetable-hating husband loved it. I've made the curried lentils with sweet potatoes and swiss chard from Smitten Kitchen several times now. It's extremely tasty, hearty.. just a wonderful dish! Ratatouille for sure. It's delicious and filling, especially with a side or on top of some couscous. Meat eaters love it too! Plus, it incorporates some of falls best vegetables - eggplant, squash, tomatoes!

What about rice (maybe wild rice), vegetables and tofu (or tempeh) in an Indian-spiced curry?
