It's July, which means inevitably I'm on a watermelon kick. In fact, me and my 6-year-old daughter are on a watermelon juice kick which started with watermelon slices leftover from our last cookout. Watermelon (without the rind, of course) goes in the blender, and after a run through the strainer, it's ready for some fresh lime juice and seltzer.
So, I decided to up the ante with some watermelon cocktails. I started with watermelon margaritas (extra delicious with a salted rim) then moved onto watermelon mojitos (the sweet watermelon juice subs in for the usual added sugar). And now, it's time to get our ginger on.
Last Summer, I discovered Reed's Extra Ginger Beer at Trader Joe's, and it was love at first sip. Let's just say I'll never go back to the mild-tasting ginger ale that I've had all my life. Turns out, it's a great mixer for all sorts of cocktails from Moscow Mules to my newly invented Watermelon Gingersnap Sipper.

Watermelon Gingersnap Sipper
1/2 cup ginger beer (like Reed's Extra Ginger Brew)
1/2 cup watermelon juice (blended and strained)
1 ounce ginger liqueur (like Domaine de Canton)
1/4 cup seltzer or sparkling water
Add ginger beer to a glass. Mix in watermelon juice and ginger liqueur. Top off with seltzer water.
