Summer Watermelon Salad With Tomatoes, Feta, and Mint
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
14 ounces tomatoes, quartered (I used green, orange, and red cherry tomatoes)
14 ounces watermelon, seeds removed, cubed
1 medium cucumber, seeds removed, cubed
7 ounces feta cheese, cubed or crumbled
1 tablespoon mint, finely chopped
1/2 teaspoon Herbes de Provence
Salt and freshly ground pepper
- Mix the olive oil and balsamic vinegar together in a small jar.
- In a large bowl, combine tomatoes, watermelon, cucumber, and feta. Toss with dressing. Sprinkle with the chopped mint and dried herbs, then season with salt and pepper.
