Strawberry Margarita Jell-O Shots

Ingredients

  1. 1 (3-ounce) box Strawberry Jell-O
    1 1/4 cups water, divided
    8 ounces tequila
    6 ounces Cointreau
    Kosher salt
    Lime, cut into triangles

Directions

  1. Cut the bottoms of the strawberries off so they stand upright. Make sure to not cut off too much or the strawberries will leak. Use a huller or melon baller to scoop out the center of the strawberry, creating a cup. Use a paper towel to pat the strawberry dry.
  2. Boil 1 cup of water in a saucepan, then add in Jell-O powder and whisk until the powder is completely dissolved.
  3. Combine tequila, Cointreau, and 1/4 cup of cold water. Add to the Jell-O, and stir to combine.
  4. Carefully pour the Jell-O mixture into the strawberries, and chill overnight. Before serving, rim the strawberry tops with salt and garnish with a lime triangle.

Watermelon Lime Jello Shots

Ingredients

  1. 10 limes
    1 (3-ounce) box Strawberry Jell-O
    1 cup water
    1 cup watermelon-flavored vodka
    Mini chocolate chips

Directions

  1. Cut the limes in half, and scoop out the flesh with a spoon.
  2. Boil 1 cup of water in a saucepan, then add in Jell-O powder and whisk until the powder is completely dissolved. Remove from heat. Add in 1 cup cold vodka, and stir to combine.
  3. Pour the Jell-O mixture into the lime halves, filling all the way to the top. Chill overnight.
  4. To serve, use a very sharp knife to carefully cut each lime in half, making wedges. Using food-safe tweezers, stick chocolate chips into the Jell-O to look like watermelon seeds.
