White Pepper: Love It or Hate It?

Although white peppercorn can give off a barnyard-like odor that is considered unpleasant to many, I think its slightly skunky scent actually works well with certain dishes. For example, I can't have Chinese hot and sour soup without it! Which end of the spectrum are you on?

Good for when you don't want the flecks of pepper in a dish. I use it when I make five spice chicken or salt and pepper calamari.

I've never bought it...I just use black pepper for everything.

I love black, pink, and green! Sometimes the white pepper smell is just a little too much for me!

Some of the first recipes I made came from Paul Prudhomme's cookbook, so I love all peppers. I think just about every recipe he has calls for a trifecta of pepper - red, white, and black. To me, it's not about the black specks not showing. It has a slight bite to it and seems to give heat a little later than black or red pepper.

I like it but rarely use it. Some people use white pepper when they don't want the pepper to be visible but I don't. I like when I can see the little pieces of pepper (pink, green, black,... whatever) in my food. It's more rustic.
