goat cheese is so good! i remember living off of the stuff in these paninis with tomatoes and herbs over in italy, YUM

I make this with sage and goat cheese sprinkled with a little buttered bread crumbs and warm the cheese mixture first b/c i hate cooked tomatoes it's really just under the broiler.

they look good - but i try to stay away from THAT much goat cheese :( i think that it's something that my boyfriend would really enjoy though - so i might have to make it as a trial
