Seattle-based Madison Park Conservatory chef Cormac Mahoney served us coco-piggy tacos. "I'm having a blast!" he told us. His tacos, made with coconut braised pork, cucumber nuoc cham, and fried shoestring potatoes, were messy to eat but worth the extra napkins.
