I have a great cold chicken salad recipe that is low fat as well as delicious. Take 1 large Napa cabbage and slice it thin. Add one bunch of sliced raw scallions, 3 oz of toasted slices almonds, 1 pack of broken and toasted Ramen noodles and one can of rinsed mandarin oranges. You can either add grilled chicken or shrimp. For the dressing - mix 2 tbs soy sauce, 1/3 cup canola oil, 1/2 cup of sugar and 1/3 cup of white vinegar. This recipe serves 4. For starters, put out fresh cut raw veggies with a low fat ranch dip or hummus. Steamed edamame is great too. These are healthy and easy finger foods that the gals can munch on while gabbing and catching up.
