15-Minute Honey Lime Chicken

This chicken has a great combination of sweet, sour and spicy flavors that kids love, and tastes great served at room temp with a salad, or sliced and turned into tacos with rice and beans. (Make a double batch and you can serve up both in one week.) I also like to brush it with a combination of lime juice and honey when it's finished cooking. Make sure to let it marinate for at least 4 hours so the chicken really absorbs the flavors.

By using a marinade in this dish, you ensure perfectly tender and moist chicken with a minimum of fuss. Set the chicken up to marinate the night before (this takes 5 minutes), and cook it on the stove top or grill the next day (10 minutes).

Serves 4

Ingredients

3 tbsp lime juice, freshly squeezed
2 tbsp olive oil
1 tbsp honey
2 cloves garlic, minced
1/2 tsp ground cumin
1/8 tsp cayenne (optional)
kosher salt and freshly ground pepper
1 1/2-2 lbs boneless, skinless chicken breasts

Preparation

To make the marinade, combine the lime juice, olive oil, honey, garlic, cumin, cayenne, and ½ teaspoon salt and ¼ teaspoon pepper. Whisk to combine. Add the chicken breasts and allow to marinate for 4-24 hours.

If grilling, preheat the grill for cooking over medium heat (400˚F) OR heat a frying pan over medium high heat. Lightly grease the grill or frying pan, then add the chicken breasts, cover, and cook for 5 minutes. Flip the chicken and cook another 5-10 minutes, or until the juices run clear when pierced with a fork. Remove the chicken from the grill or pan, tent it with foil, and allow it to rest for 5 minutes before slicing. Serve immediately or at room temperature.
