Almost every busy mom has mastered taco night, spaghetti with meatballs, and the ever trusty breakfast for dinner on those evenings when you just aren't sure what to make. But what about those nights when the clock is ticking away and you've already used up your go-to recipes for the week?
Sometimes a few simple ingredients you have sitting right in front of you is all you need for a quick & tasty dinner in just a matter of minutes. Here's one that's perfect for fall.
1 lb. boneless, skinless chicken breast cut into tender size slices
2 tbs. extra virgin olive oil
Any seasoning you like (I use Everglades Seasoning or Cavender's All Purpose Greek Seasoning)
2-3 sweet potatoes, peeled & diced (or any vegetable you have around)
1 onion, diced
A dash of cinnamon & sea salt
Starting with the sweet potatoes, turn the oven on to 425, and add the potatoes, onion, cinnamon, salt, and 1 tbs olive oil to a glass baking dish. Pop in the oven for 25 minutes, stirring at least once while they cook.
In a large skillet, add 1 tbs olive oil and the chicken. Grill on medium to medium-high heat, adding the seasoning of your choice until cooked through, which is usually about 10 minutes tops. Cover with a lid and remove from heat to keep warm until the veggies are done.
Serve with a little honey mustard and a side salad, and there you have a super easy and extremely tasty dinner done in about 30 minutes with ingredients you can usually find in your refrigerator!
