A Caesar Salad Dinner

I love Caesar salads, and this spiced up version doesn’t disappoint! Feel free to leave the chipotle out if your kids don't like spicy food — though encourage them to try it; my kids love it! You can also omit the raw egg if it makes you nervous, but the egg is what emulsifies the dressing, so substitute a spoonful of Dijon mustard if you don’t use it. Serve with grilled steak, chicken, or shrimp over the top to make it a meal.

Serves 4

Ingredients

1 large egg (or 1 tbsp Dijon mustard)
3 cloves garlic
1 tbsp lime juice, freshly squeezed
1-2 chipotle peppers in adobo sauce (optional)
1/3 cup canola oil
2 hearts of romaine
parmesan cheese shavings
croutons
1 lb chicken, steak, shrimp, or fish, grilled and sliced

Preparation

To make the dressing, combine the egg (or Dijon mustard), peeled garlic, lime juice, chipotle chile, ½ teaspoon salt, and 1/2 teaspoon pepper in a blender. Puree until smooth, then with the motor on the lowest speed, slowly add the oil and blend until it’s a thick dressing. 

Coarsely chop the lettuce. When ready to serve the salad, place the lettuce and croutons in a large salad bowl. Pour most of the dressing over the top and toss. Taste and add more dressing if needed. Top the salad with generous amounts of cheese. If using, place a generous amount of sliced chicken or steak over the top. Serve immediately.
