Unless I’m making my grandma’s green bean casserole, we like ’em simple around here.
The secret to this kid favorite is finding fresh, crisp beans.
1 tablespoon olive oil
1 pound green beans, trimmed
1 shallot, thinly sliced
1⁄2 cup water
2 teaspoons unsalted butter
2 tablespoons sliced almonds, toasted
1 tablespoon fresh lemon juice
1⁄4 teaspoon kosher salt
1⁄4 teaspoon freshly ground black pepper
Heat oil in a large skillet over medium heat. Add beans and shallot; cook 5 minutes, stirring frequently. Add 1⁄2 cup water; cover and cook 5 minutes or until beans are crisp-tender.
Melt butter in a small skillet over medium heat. Add almonds; cook 5 minutes or until browned, stirring frequently. Add almond mixture, lemon juice, and remaining ingredients to bean mixture;
