Kid-Sized Sliders with Cheddar and Onions

This is a fun way to bring the mini-burger trend into your home! These sliders are moist, delicious and perfectly kid-sized.

Serves 4


canola oil
1 1/4 lbs ground beef
1 tsp salt
1 tsp freshly ground pepper
4 slices cheddar cheese
1 small yellow onion, thinly sliced
8 mini hamburger buns or dinner rolls
Condiments: chipotle or regular ketchup for serving


Lightly oil a large cast-iron frying pan or griddle and heat over medium heat until hot. Alternatively, prepare your grill for cooking over medium heat. Meanwhile, in a bowl, lightly mix together the ground beef, salt, and pepper. Handling the beef as little as possible, form 8 small, plump patties. They should be about 3” wide and 1 ½” thick.

Place the burgers in the hot pan or on the grill. Cook until the burgers are browned on the undersides, about 3 minutes. Turn the burgers. Place 1/2 slice of cheese on the cooked side of each burger and cook until the burgers are browned on the bottom and the cheese is melted, 3–4 minutes longer for medium rare. At this point, the onions can be added to the pan to cook for the last 3-4 minutes while the burgers finish. If there isn’t enough space, they can be cooked afterwards.

When the burgers are done cooking, place the buns split side down in the pan and cook over low heat until crusty, about 2 minutes. Arrange the buns on individual plates. Place a burger on the bottom half of each roll and top with onions. Spread ketchup on the top half of each bun and place on top of the burger. Serve at once.
