Lil Tip: Swap Out Your Mashed Potatoes with Cauliflower Puree

If your tots never tire of mashed potatoes, consider swapping out the root for a vegetable. Simply steam or lightly boil cauliflower florets, then strain them and add a bit of milk or broth and a dab of butter. Use a hand-mixer to puree the ingredients and then salt and pepper them to taste before plating. This fiber and Vitamin C filled treat is so delicious your kids might not notice their staple has been replaced.

I first have mashed cauliflower at ruby tuesdays and loved it so much that i learned how to make it myself. so yummy!

Growing up, I was never a fan of cauliflower but I just made a soup and they're great! Popped in a blender, you don't even need butter to make it creamy.

My daughter LOVES mashed potatoes, I've started mixing in borccoli and cauliflower and she eats it likes it's going out of style! I've never done just cauliflower maybe I'll try that next time.

These are soooooo good; I make them all the time! Another way to make them tasty is to add about a 1/4 cup of low fat herb and garlic cream cheese. It makes them even creamier!

OMG - mashed cauliflower is DELICIOUS!!!! Potatoes are very high in the glycemic index so we try to not eat them often at home,so we have substituded the mashed P for the mashed cauliflower they're always a huge success!!! I also like the texture better, though keep in mind I haven't been able to get cauliflour as creamy as mashed potatoes.
