When shallots are cooked slowly, they become sinfully sweet and practically melt in your mouth. Toss this velvety sauce with your favorite pasta for an instant family-favorite. It's great as an entrée, or serve it as a side to grilled chicken or fish.
1/4 cup extra virgin olive oil
12 shallots or pearl onions, halved and thinly sliced
3 cloves garlic, minced
kosher salt and freshly ground pepper
1 lb pasta (whatever your family likes - spaghetti, fettuccine, egg noodles, gluten-free, etc)
1 cup freshly grated Parmigiano-Reggiano
Heat the olive oil in a large pan over medium-low heat. Add the shallots or pearl onions, garlic and a pinch of salt. Cook, stirring occasionally, until softened and golden brown, about 20 minutes. Season with salt and pepper to taste.
While the shallots or onions are cooking, bring a large pot of salted water to a boil and cook your family's favorite pasta until al dente. Pour about 1 cup of the pasta cooking water into the cooked shallots or onions and stir. Drain the pasta and add to the shallots or onions. Add the cheese and toss. Serve immediately!
