What child (or adult, for that matter) doesn't love french fries? These "fries" taste just as good as the deep fried version, but they're simple to make and much healthier baked in the oven. Serve them as a side dish or a fun afternoon snack.
2 lbs russet potatoes
3 tbsp olive oil
2 tsp kosher salt
freshly ground pepper
Place an empty baking sheet into the oven and preheat to 425-degrees.
Wash and dry the potatoes, then slice into wedges. You can cut the potatoes either lengthwise or crosswise - just make sure the pieces are uniform to ensure even baking. Place the potato wedges in a large bowl, add 2 tbsp of the olive oil, salt and a few grindings of pepper. Toss to coat.
When the oven has reached 425-degrees, carefully remove the HOT baking sheet. Pour the remaining 1 tbsp of olive oil onto the baking sheet (it will sizzle) and then turn the pan to coat. Spread the potatoes evenly on the baking sheet and return to the oven. Placing the potatoes on a hot, oiled baking sheet ensures they get nice and crispy and keeps them from sticking.
Bake for 25-30 minutes, turning the potatoes once. Serve with your favorite dipping sauce and enjoy!
