Simplest (& Best!) Roast Chicken Ever

This is just the craziest recipe ever. It is so simple but I swear it’s one of the tastiest chickens around!

Serves 4

Ingredients

1 whole chicken, about 4-5 lbs
kosher salt and freshly ground pepper
2 tbsp lemon juice, freshly squeezed
2 tbsp butter
1 tbsp thyme, tarragon or basil, chopped

Preparation

Preheat the oven to 400-degrees. Rinse and pat the chicken dry with paper towels-inside and out. Tuck the wing tips under the body. Place the chicken breast side down in a pan that is barely larger than the bird itself. (I like a cast iron pan.)

Roast the bird for 30 minutes. Turn it over and roast for another 30 minutes, or until the internal temperature registers 170 in the thigh or 160 in the breast. Remove from the pan to a cutting board and allow to rest.

Strain the juices from the pan into a saucepan. Add the lemon juice, butter, and 2 tbsp. of water. Bring to a boil, then simmer to thicken the sauce. Taste, adding salt and pepper if necessary. Stir in the herbs. Carve the chicken then spoon a little of the sauce over each piece. Serve immediately.
