This is my husband's favorite meal I make. I always make it when I want him to feel better. This recipe is actually two recipes that I meshed together with each parts of the recipe I preferred.

One of my ultimate comfort food dishes is Chicken and Dumplings. I'm not sure what it is about this dish, but it just always seems to hit the spot. And, best of all, it can be cooked in the slow cooker!

This is a great recipe. You can eat it plain or as a base for other desserts. Great for the holidays!

I really liked the muffin recipe, however, I would have maybe left the corn out and perhaps added more onion for flavor. I am sure the recipe would be great plain as well.
2 cups flour
1 tablespoon plus 1 teaspoon sugar
1 1/4 teaspoon salt
1/4 teaspoon pepper
8 slices of bacon coarsely choppe d
6 tablespoons buttter
1/3 cup finely chopped onion
1 1/2 cup frozen corn
1 1/4 buttermilk

i baked these as the sun was coming up. i thought the ray of light coming in made them look kind of pretty . .

I needed to make a small batch of cupcakes for a man at church, so I thought this would be a perfect opportunity to both try out The Pioneer Woman's Best Chocolate Sheet Cake Ever and to show you a small tutorial on how I make buttercream icing and how to pipe it onto cupcakes. I felt the need to try this recipe because I have heard so many wonderful things about it, but I wanted to try it in cupcake form, so I halved the recipe. Here's the recipe and the following pictures that I took during the process.

This is one of my favorite Carrot Cake recipies. It is so moist
and Yummy!
2 cups flour, 2 tsp Soda, 2 tsp Cinnomon, 1/2 tsp salt
3 eggs, 3/4 cup Buttermilk, 2 cups sugar, 3/4 cups oil, 2 tsp Vanilla, 2 cups grated carrots, 1 small can of crushed pineapple (well drained) 1 cup coconut, 1 cup chopped nuts
Mix dry ingredients, beat egg, add oil, buttermilk, sugar, vanilla, and mix.

Sometimes I feel that I bear a resemblance to the Tin Man. While I may not be silver, I am quite often shiny and I hate it. I often tell my husband that I could probably make the reserves for oil companies all by myself.

Yesterday I was in my usual baking mood and all I knew was that I wanted to make muffins!
It had to be different though, something new, something that had to do with fruit I had most.
That fruit was mangoes.
