Detox never tasted so good. This recipe for red cabbage and apple salad with ginger vinaigrette delights for just 215 calories.
Prep: 20 minutes Makes 4 servings
Ingredients:
3 tablespoons apple cider vinegar
1 1/2 teaspoons grated peeled fresh ginger
1 teaspoon Dijon mustard
1 teaspoon honey
1/2 teaspoon minced garlic
3 tablespoons extra-virgin olive oil
1/4 teaspoon kosher salt 1
/8 teaspoon ground black pepper
2 cups packed shredded red cabbage
2 cups packed shredded Napa cabbage
2 cups thinly sliced Granny Smith apple
2 teaspoons fresh lemon juice
1/4 cup golden raisins, plumped in hot water
1/4 cup toasted, unsalted sunflower seeds
Directions:
Whisk together first 5 ingredients (through garlic) in a small bowl.

I am going to give you my personal look at Obamacare from a perspective which may seem a bit strange but in reality it should be alarming. The interesting thing is that most of all of my childhood I went without even some of the basic things people assume most everyone has. The only healthcare I had as a child was Medi-cal...which is the program upon which Obamacare was designed.
My father worked several part-time jobs as well as his full-time job as a Baptist minister. He did everything possible to provide for us, worked his fingers to the bone and still managed to comfort the people in our church and help them deal with their own problems. Not once did any congregation we served bother to possibly consider that making sure the minister and his family had any healthcare or even some of the basic necessities in life was one of their priorities. They did however call at any time of the day or night for his help and he was there for them.
Sometimes our whole family was there for them. I was a very experienced babysitter, cook, and housekeeper before I was even 11. This is not bitterness I speak from---it is my attempt at revealing to you that many who are among the uninsured are hardworking people often working in service-oriented positions which simply aren't offered healthcare.
So....let me get back to Medi-cal......the mentor of Obamacare. When I hear people on the Obamacare bandwagon I think they probably don't really understand what they are supporting. Many have never been on medi-cal.

My hubs bought me tickets to see my favey fav band, No Doubt, kickoff their tour in May. The concert is at night, outdoors, and in San Diego. I need a look that's funky and fun but also chic!

This healthy recipe for Roasted Chicken and Yams is so hearty, you’d never guess it serves up only about 350 calories.
Makes 8 servings Prep: 10 minutes Cook: 60 minutes
Ingredients:
1/2 cup extra-virgin olive oil
2 cups fat-free, low-sodium chicken broth
1 1/2 tablespoons herbes de Provence
4 garlic cloves, peeled and minced
2 large peeled yams, cut into 1/2-inch pieces
8–10 skinless boneless chicken breast halves
Directions:
Preheat oven to 400°. In a large bowl, combine the first 4 ingredients (through garlic).

needed: 1/2 package of Mori-Nu Lite Silken Tofu (the kind in the sealed package-- look in a health food store) - 60 cals
1/3 cup (approximate, I guess you can use more or less) frozen or fresh fruit ( l like mango or raspberry, frozen) about 40 cals
vanilla extract
sweetener to taste
-in a medium-sized bowl, chop up fruit into small pieces, do same with tofu, and mix
- add vanilla and sweetener
- blend using submersion blender or just dump it all into a blender and let it go until smooth.
- Chill (or not) and enjoy! SO good.

I was introduced to Mario's by some friends that live in Huntington Beach. Mario's Restaurant - 18603 Main St, Huntington Beach, CA 9264- (714) 842-5811. The service isn't stellar, but all the dishes I've tried there are very yummy.
