Well I was working on this all morning ... here is the recipe for the cake. Now the basket was entirely different task.

This is one of my favorite Carrot Cake recipies. It is so moist
and Yummy!
2 cups flour, 2 tsp Soda, 2 tsp Cinnomon, 1/2 tsp salt
3 eggs, 3/4 cup Buttermilk, 2 cups sugar, 3/4 cups oil, 2 tsp Vanilla, 2 cups grated carrots, 1 small can of crushed pineapple (well drained) 1 cup coconut, 1 cup chopped nuts
Mix dry ingredients, beat egg, add oil, buttermilk, sugar, vanilla, and mix.

INGREDIENTS
3 cups grated carrots
2 cups all-purpose flour
2 cups white sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
4 eggs
1 1/2 cups vegetable oil
1 1/4 teaspoons vanilla extract
1 (8 ounce) can crushed pineapple with juice
3/4 cup chopped pecans
3 1/2 cups confectioners' sugar
1 (8 ounce) package Neufchatel cheese
1/2 cup butter, softened
1 1/4 teaspoons vanilla extract
1 cup chopped pecans
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, combine grated carrots, flour, white sugar, baking soda, baking powder, salt and cinnamon.

Whether as a healthy snack, or as a quick breakfast or dessert, these cupcakes are not your average cupcakes. They are actually very healthy for you and soo delicious and satisfying! I always store them in an airtight container and then put them in the fridge for whenever I get hungry!

I hope everyone had a nice holiday. I had the honor of cooking dinner for a small group of four people. The meal was vegetarian (actually vegan, except for one dessert), mostly organic, with no added sugar and nothing refined.

I had dessert duty for a get together this weekend and I found this recipe from Better Homes and Gardens. It sounded strange using shredded sweet potatoes, but I thought it turned out great and was big hit. It is for a 3-layer cake, but I only had 2 9" round pans, so I made the two rounds and poured the extra batter into a loaf pan.

I was baking carrot cake this weekend so I pulled out my recipe book, otherwise known as my laptop. About a year ago I digitalized my recipes because I am always on my computer and it organizes my life, and because I always lose papers. I tried out several different programs I found on various websites.

I am not usually a cake lover. But for some reason I am now in love with Carrot Cake. I never cared for it before but recently I have had a piece here and there (to be polite at a gathering) and I was quite surprised how much I love it.

My mother is a reader of Woman's Day Magazine (whose recipes I usually love) and she passed on these 2 ingredient recipe cards to me. Sure, some of them are a little odd and I will probably never, ever attempt, but there were a few that immediately grabbed my attention and I can't wait to try out! (Pineapple with coconut sorbet...:DROOL:)

Appetizers
Marinate mixed olives (jar) with freshly grated peel and juice from 1 lemon in refrigerator at least 24 hours.
