I know this is a pretty basic recipe but everytime I goto Cracker Barrel (which isn't often) I get the hashbrown casserole as a side dish. So, I went on the prowl for a copy cat recipe. Sounds pretty easy to me!

This is one of those dishes that helps you remember the flavors of Thanksgiving any day of the year. I can't wait to test it out! Plus, it's a casserole that cooks fairly quickly and I can't help but love that too!

3 cups frozen potatoes
1 1/2 cups frozen green beans
1 1/2 cups chopped cooked ham
3/4 cup milk
1/2 cup shredded cheddar cheese
1 can condensed 98% fat free cream of chicken soup (30% less sodium)
make sure you use less sodium, because the ham has enough salt
Heat oven to 375. Spray 8 inch (2 quart) glass baking dish with cooking spray.
In large bowl mix ingredients; spoon into baking dish.

Who doesn't love a recipe that includes potato chips? Particularly the crushed ones that are just waiting to be thrown away from the bottom of the bag...(I recommend Utz!)
Tuna Noodle Casserole

Prep Time: 10 minutes
Makes 8 servings.
1 (16 ounce) package uncooked pasta shells
2 (6 ounce) cans tuna, drained
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of celery soup
1 1/4 cups milk
1 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon crushed garlic
4 slices processed American cheese
1 1/2 cups crushed potato chips

Casseroles are so in right now! They are easy to make and quick to bake!
Just pop it in the oven 45 minutes before you eat and let the heat do all the magic!

This comforting recipe isn't the fastest to make, but it tastes so good it's worth trying it. It's also perfect if you have guests over for dinner and don't feel like spending all your time in the kitchen. It can easily be prepared ahead of time.

My boyfriend and I decided to cook something together on Valentine's Day (I normally do the cooking, he takes care of the dishes!) and we ended up making a very popular (but basic) dish from his native Finland. Makaroonilaatikko is very easy to make and only requires four ingredients (eggs, milk, macaroni, ground beef) if you follow the recipe, but since Finnish cooking isn't the most tasteful, we modified it a bit by adding a few things. Here's our improved recipe:
Recipe:
- 1 package whole wheat macaroni (400g or 14oz)
- 1 red onion, halved, then thinly sliced
- 2 garlic cloves, minced
- 1 lb ground beef
- meat of 2 Italian sausages
- 1 liter milk
- 4 eggs
- 1 cup Parmesan cheese, finely grated, + more for serving
Preheat oven to 350°F.

1 cup uncooked instant rice
1/2 cup chopped onion
1/4 cup fat-free milk
4 ounces light processed cheese, cubed (such as Velveeta Light)
2 tablespoons butter or stick margarine, softened
2 (10-ounce) packages frozen chopped broccoli, thawed and drained
1 (10 3/4-ounce) can condensed reduced-fat, reduced-sodium cream of mushroom soup, undiluted
Preheat oven to 350 degrees F.
Combine all ingredients in a large bowl, and spoon into a 2-quart casserole. Bake at 350 degrees F for 45 minutes.

Frozen Burrito Casserole
This is so quick and easy! Put frozen burritos (I can usually put 7 – 8 burritos in there) in a 9x13” pan. (You can buy a large back of them in the frozen food section of the grocery store.) Top with a big can of enchilada sauce (red or green) or even salsa – whatever you have on hand.
