Hi everyone,
Today I'm going to talk about a new discovery of mine: coconut oil. Although it's an oil, it's actually somewhat solid at room temperature due to its level of saturated fat. In the past, coconut oil was shunned because of it's saturated fats, but a slew of new studies is proving that this oil actually plays a great role in optimum health.

I am not a very accomplished cook, and I certainly don't consider myself a seasoned baker. However, I found an incredibly simple bread recipe for a bread that met all my nutritional standards. It's made primarily from spelt flour which is far more nutritious than wheat (and not refined), and contains no yeast.

This may seem like an odd combination, but it is my new breakfast favorite.
It's a piece of toasted Ezekiel Sprouted Sesame Bread (read about sprouted bread in the All About Bread post). Then I add a bit of organic coconut oil which adds a sweet, buttery flavor.

Since I saw some of you ladies ask, here are some recipes that I use in my homemade care.
My oil staples are: Vitamin E oil (it's a natural preservative), virgin coconut oil, avocado oil, lemon oil (to fade discoloration), Evoo, peppermint oil, jojoba oil, and sweet almond oils as a carrier oil.
My other staples are: Shea butter, honey, mayonnaise, coconut milk, eggs (be careful though with the eggs.

I hope everyone had a nice holiday. I had the honor of cooking dinner for a small group of four people. The meal was vegetarian (actually vegan, except for one dessert), mostly organic, with no added sugar and nothing refined.

I promised Kastarte2 that I would post some curry recipes, so here is one of my favorites. It is from a restaurant here in Seattle called Cafe Flora (hubby bought me their cookbook for Mother's Day last year!). I usually eat here once every few weeks!
