Valentines Day is almost here and your probably looking for a sweet recipe to make for your hubby.
If you're not, then think of it this way, don't you rather give to someone you love, a mouth watering dessert you made, then a store bought waxy chocolate heart?
I don't know about you guys, but I'd say hell yeah!

Thanksgiving is fast approaching, and my love of all things pumpkin is hardly waning. From yogurt to muffins, I relish this tasty flavor of Fall. If you're looking for a pumpkin pie alternative, these pumpkin-carrot bars are delish.

Banana Pudding Squares

Prep Time: 30 min
Total Time: 3 hr 30 min
Makes: 24 servings
This dessert is VERY tasty and made with lighter ingredients to make it a more "healthier" dessert. I actually made this last year during playoff season and on Superbowl Sunday, and now with football back into swing it made me think of it. I've gotten rave reviews each time I've made it.

My sister is a peanut butter/chocolate-aholic so when I made cupcakes to sell at her Kappa Kup BBQ, I decided to give this recipe a try. I got super worried half way through because the cake itself wasn't very sweet tasting and kind of blahhy. But once they are filled with the peanut butter filling and frosted with the chocolate ganache frosting (this is my new favorite recipe for chocolate icing!) they were spectacular.

Chocolate Orbit Cake
(a David Lebovitz recipe that came with the Scharffen Berger chocolate)
9.7 ounces Scharffen Berger semisweet chocolate, chopped*
7 ounces (two sticks minus one tablespoon) unsalted butter, cubed**
5 large eggs, room temperature
1 cup sugar
1. Position a rack in the center of the oven. Preheat to 350F.

Slow Cooker Apple Brown Betty
From about.com
4 cups small bread cubes (1/2 inch)
1/2 cup butter/margarine -- melted
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon salt
3/4 cup brown sugar -- firmly packed
4 cups cooking apples -- peeled,chopped
Mix bread cubes with butter, cinnamon, nutmeg, salt and brown sugar. Arrange in alternate layers with apples in slow cooker.

Ingredients:
1/2 cup HERSHEY'S Cocoa
1/4 cup (1/2 stick) butter or margarine, melted
3/4 cup sugar
2 eggs
2 teaspoons vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk or sour milk*
1/2 cup chopped nuts(optional)
HOT FUDGE SAUCE(recipe follows)
STRAWBERRY DESSERT CREAM or APPLE-CINNAMON TOPPING or PEACH-NUTMEG TOPPING or CHOCOLATE MAPLE SAUCE(recipes follow)
Directions:
1. Stir cocoa and butter in bowl until smooth; stir in sugar. Add eggs and vanilla; beat well.

I met with my nutritionist this week, and she offered me some great recipes that are both heart healthy and full of flavor. Cobblers are, to me, one of the most versatile desserts. I've seen them made with a more biscuit-like crust and a pie-like crust...almost like a fruit pie with only the top pie crust.

I'm a sucker for those fabulous fruit tarts (you know, the little ones in bakeries with crust, cream inside and glossy fruit on top). So I came up with a simple and healthier version that satisfies my cravings (inspired in part by the frozen fruit/whip recipe posted in February).
There's lots of room for customization, too.
