Dulce De Leche Ice Cream & Choco Covered Graham Cracker Sandwiches
From Emeril Lagasse
Dulce de Leche, recipe follows or you can purchase it
2 cups heavy cream
1 cup milk
1/2 cup sugar
6 large egg yolks
chocolate covered graham crackers, 2 per person
In a medium heavy saucepan, combine 3/4 cup of the dulce de leche, the cream, milk, and sugar. Bring to a gentle boil over medium heat. Remove from the heat.
Beat the egg yolks in a medium bowl.
Whisk 1 cup of the hot cream mixture into the egg yolks.

This chocolate-truffle-inspired tart shows just how decadent simplicity can be. Dulce de Leche is a South American delicacy, made by cooking condensed milk into caramel -- its growing popularity means you can buy it at most stores these days. It's the perfect complement to the rich chocolate -- and the addition of flaked sea salt gives the whole thing balance and chef-like flair.

Just last week I was in Las Vegas where I had the chance to visit Mesa Grill (in Caesar's) once again. Im a fan of Bobby Flay and love his grilled foods. As a result, my second trip to Mesa with my bf did not disappoint:
Blue Corn Cornbread Muffins and Italian Sourdough Bread -- the cornbread was our fave
Rough Cut Raw Tuna Nachos with Mango Hot Sauce and Avocado Crema -- so incredibly delicious and fresh, the kick of cilantro was great
Crispy Squash Blossoms Filled with Ricotta Cheese, Corn, Basil, and a
Yellow Habanero Sauce -- a very elegant starter that paired nicely with the sauce
Spice Crusted Swordfish Steak with Charred Jalapeno-Basil Vinaigrette -- this was the bf's and it was very, very good
21-Day Aged Black Angus New York Strip Steak with House-Made Mesa Steak Sauce -- cooked perfectly and very tasty, although I wasnt a fan of the steak sauce (but then again I dont like A1)
Side of Roasted Corn with Lime, Chipotle, and Cotija -- unbelievably delicious, the lime was such a good complement to the roasted corn
Warm Chocolate Cake, Dulce de Leche, and Toasted Pecan Ice Cream Served on a French Macaroon -- a very sinfully delicious lava cake, but not too much dulce de leche (which tasted more like nutmeg juice than anything), so I was sad
Mesa Fresca with Sauza Hornitos Tequila and Grapefruit Soda -- I wanted to try this last time, and it is quite refreshing!

Wow, this photoshoot was even worse than last week's. I think this was the all-time worst photoshoot -- I get the feeling I'm going to be saying that every week from here on out.
As usual, the photos hold the most weight in my rankings, but I'll also be discussing other aspects of the show and contestants as I run down the portfolio.

This is a twist on Banoffee pie this dessert is perfect for chocolate lovers and I know there are many of you out there.
Yummie !!!
Ingredients
125g digestive biscuits, crushed
125g Belgian deluxe dark chocolate, melted
40g custard powder
450ml semi-skimmed milk
25g sugar
½ x 450g jar Dulce de Leche
2 bananas, sliced
284ml carton whipping cream
25g Belgian dark chocolate, grated
115g pack white chocolate chips
How to make it:
Mix the digestives in a bowl with 50g of the melted chocolate.

My mother is a reader of Woman's Day Magazine (whose recipes I usually love) and she passed on these 2 ingredient recipe cards to me. Sure, some of them are a little odd and I will probably never, ever attempt, but there were a few that immediately grabbed my attention and I can't wait to try out! (Pineapple with coconut sorbet...:DROOL:)

In order to probe into the true answer to that question, I've decided to compare the girls' complete portfolios for each of their photoshoots to see which I think had the best overall performance through the entirety of Cycle 8.

One of the many positives of having a brother who lived in London was that my mother became obsessed with recreating this desert that she had while she was there, banoffee pie (the name gets the celebrity couple treatment - banana + toffee = banoffee!). My mother made her version with a rich gourmet caramel sauce she bought, and I have read suggestions of using canned Dulce de Leche (the toffee is fussy to make from scratch). The pie is delicious, although I will pretty much eat bananas in any figuration!

Breakfast: Chocolate Alfajor
I know this is not diet at all! Its like a cake filled with dulce de leche. The only reason I ate it is because a friend brought it from argentina for the whole office and I couldnt say no to her :(
Anyways it's pretty small, and only had one filling, not a double :p
Lunch: Small salad
Dinner: Grilled Veggies
