This is one of those meals that I go to on those nights where I haven't prepared anything for dinner, but I want something fast and easy. It's a great meal that comes together quickly and, even better, it's something that you can personalize and really tailor to the likes and dislikes of your family. So, really, it can be as expensive or inexpensive as you'd like to make it!

Summer without Mexican food is like a piñata without candy. Luckily, there's always a way to reinvent fattening dishes.
Prep: 10 min; Cook: 15 min
Ingredients:
2 tsp olive oil
1/2 red or white onion
Sliced 1 red, orange or green bell pepper
Sliced 2 cloves garlic, minced
2 whole chicken breasts, grilled and cut into strips, or 8 oz extra-lean (95 percent) ground beef
1/2 c salsa
1/4 c nonfat sour cream
4 whole-wheat tortillas, 7"-8" in diameter (Variation: spinach or corn-flour tortillas)
1 c shredded low-fat mozzarella cheese
Directions:
Heat olive oil in a medium skillet.

Last night we had Mexican food all home made.... we made some chicken fajitas with all the trimmings.

1 chicken breast, chopped
2 tsp chili powder
1/2 tsp powdered chicken bouillon
1/2 tsp garlic salt
1/4 tsp cumin
1 tsp lime juice
1/2 cup lettuce
1/4 cup onion, chopped
1/2 cup tomatoes, chopped
2 tortillas, torn into strips
1/2 cup shredded cheese
Ranch dressing
Fry chicken breast in skillet until cooked. Add chili powder, bouillon, garlic salt, cumin, and lime juice; toss to coat. Place 1/4 cup lettuce onto plate.

Grilled or roasted portobello mushrooms have a meat like texture and flavor. I like to saute the portobellos in a red wine, like a burgundy--it tastes extraordinary!
2 jumbo portobello mushrooms, trimmed, rinsed and patted dry
1/4 C Burgundy wine (plus a bit more to drink as you cook)!

INGREDIENTS:
2 tablespoons vegetable oil
1/2 pound boneless skinless chicken breasts, cut into 1/8- to 1/4-inch strips
1/2 medium bell pepper, cut into thin strips
1 small onion
1/2 cup Old El Paso® Thick 'n Chunky salsa
1 1/2 cups Original Bisquick® mix
1/3 cup very hot water
1 1/2 cups shredded mozzarella cheese (6 ounces)
1. Move oven rack to lowest position. Heat oven to 450°F.

My boyfriend's mother made these for dinner one night while we were visiting. They were delicious and easy.
INGREDIENTS
1 pound lean boneless pork
2 clove garlic, minced
1 teaspoon oregano, crumbled
½ teaspoon cumin
1 teaspoon seasoned salt
2 tablespoon orange juice
2 tablespoon vinegar
dash hot pepper sauce
1 tablespoon canola oil
1 large red onion, peeled and sliced
1 green pepper, seeded and sliced
1 red or yellow pepper, seeded and sliced
4 flour tortillas
Green onion tops, sliced
Shredded lettuce
Salsa
PREPARATION:
Slice pork across grain into 1/8" strips.

A little spice can change everything about a meal. I, for one, love to use lots of different things and creative combinations when making a meal. And usually they've been at least a moderate success.

Hot Chilli Chicken Fajitas

Tomato and Avocado Salsa: YUMMY
Preparation time 1-2 hours
Cooking time less than 10 mins
Ingredients
2 tbsp chilli oil
1 tbsp hot chilli powder
1 tbsp paprika
pinch of sugar
zest and juice of 1 lime
4 chicken breasts
For the Tomato and Avocado Salsa:
4 large tomatoes, deseeded and finely diced
1 red chilli, finely chopped
juice of 1 lime
1 small red onion finely chopped
2 medium ripe avocados, stoned, peeled and finely diced
2 tbsp olive oil
120g/8 tbsp freshly roughly chopped coriander/cilantro
salt and pepper
To Serve:
4-8 medium floured tortillas, warmed
1 small iceberg lettuce, shredded
150ml/¼pt soured cream
8 bamboo skewers, soaked in water overnight
Method
1. Mix together the chilli oil, paprika, chilli powder, sugar and the lime juice and zest. Cut each chicken breast lengthways into six strips.

The only thing "premium" about these strips is the caloric price you pay. Add a large fries and regular soda and this seemingly innocuous chicken meal tops out at 1,710 calories.
