Thanksgiving is fast approaching, and my love of all things pumpkin is hardly waning. From yogurt to muffins, I relish this tasty flavor of Fall. If you're looking for a pumpkin pie alternative, these pumpkin-carrot bars are delish.

3 Tbs margarine or butter
4 medium leeks, white and pale green part only, sliced 1" thick
2 1/2 C chicken stock
1 1/2 lbs Yukon Gold Potatoes, peeled and cut into 2" pieces
1/2 tsp salt
1/8 tsp ground white pepper
1 1/4 C rice milk or soy milk, more if needed
Chives, chopped, for garnish--optional
Tofutti brand, Sour Supreme sour cream, optional
To prepare the soup: Melt margarine or butter in a large saucepan over medium-high heat. Add the leek and saute until soft but not brown about 3 mins. Add the chicken stock, potatoes, salt, and pepper, bring to a boil.

Here's another one I got from Gluten Free:
Valentine's Day Chocolate Mousse (Gluten-Free)
Many hard to find baking ingredients can be purchased at The Gluten-Free Mall, also see Gluten-Free Cookbooks.
Ingredients:
8 strawberries (optional)
CHOCOLATE HEARTS (recipe follows, optional)
1/3 cup sugar
3 tablespoons cornstarch
1 cup milk
½ cup water
4 egg yolks, beaten
1 ¾ cups HERSHEY’S Semi-Sweet Chocolate Chips or HERSHEY’S Milk Chocolate Chips
1 teaspoon vanilla extract
¾ cup whipping cream, whipped
½ cup whipping cream, whipped
Directions:
1. Prepare CHOCOLATE HEARTS.

1 Tbs Olive oil
1/2 C chopped onion
1/2 C fresh or frozen corn kernels
1/4 C chopped orange bell peppers
1/2 C Vegetable stock
8 oz White Wave Tempeh
2 tsp Ancho Chili Dry Rub (see below)
Fresh ground black pepper
1 10oz can red enchilada sauce
6 oz soy jalepeno Jack cheese, grated
1 10oz can black olives, sliced
1/2 C chopped green onion
12 corn tortillas
Tofutti brand Sour Supreme, Better than Sour Cream, dollop--optional
1 Tbs salsa, optional
Ancho Chili Rub:
1 Tbs ancho chili powder
1 Tbs dried oregano
1 1/2 tsp salt
1 1/2 tsp sucanat sugar
1. Preheat oven to 350. In a nonstick skillet over medium heat, heat olive oil.

Focaccia with Chestnut Flour
In Italy this recipe is traditionally made with chestnut flour. In fact, chestnut flour is used extensively in Italian baking as it imparts a nutty and slightly sweet flavor that adds richness to pastries and breads. Focaccia is often made with fennel seed or rosemary and chopped or whole pine nuts.

This question comes from the group The Children's Table from member chab.
Does anyone out there know of a sugar free "O" cereal? I used to get Cascadian Farms "O" cereal because it was organic and sugar free, but it seems like they changed their product as it now has sugar.
