Serves: 4
Ingredients:
Parchment paper
6 dark plums, halved and pitted
1 tbsp unsalted butter, melted
1 tbsp sugar
1/2 cup
2 percent
Greek yogurt
2 tbsp hazelnuts, toasted in the oven at 375˚ for 7 minutes, chopped 2 tsp honey
Directions:
Heat oven to 375˚.
Line a baking sheet with parchment paper.

Every weekend I have this little obsession of browsing through the recipes of Bon Appetit, Gourmet, Martha Stewart & Sunset magazines in search for a little inspiration or a recipe that is unique and fun. This Sunday I had a hankering for something Fall, Halloween themed and Sassy. Something that I could easily ship to work to feed my coworkers and something that I could add a personal twist too.

I just came back from Greece, where the yogurt is worlds away from the watery erzatz stuff like Dannon that we eat here. No mix-ins, just thick wonderful stuff. We have it here now: FAGE Total (2%, 0%, 5% fat, or the Classic).

Today I was browsing teamsugar and came across user mdbzmom asking for a recipe that consisted nonfat plain yogurt.
This got me really excited, because a lot of my favorite cakes have just that in them.

I found this great idea for dinner last night: scallops with mashed cauliflower and roasted asparagus. So yum, and the recipe says it's only 300 calories per serving! Here's where I got it:

Seared Jumbo Scallops with Cauliflower Puree & Grilled Asparagus
(serves 2)
1 lb jumbo sea scallops (about 10)
1 small head cauliflower
2 cloves garlic
1 bunch asparagus
2-4 tbs snipped fresh chives
1/2 c Greek yogurt
1/2 tbs butter
Olive oil spray (or you can brush/drizzle)
Salt and pepper to taste
Seasoning salt
Directions:
Bring a large stockpot of water to boil.

Try this great healthy easy snack!
Prep: 20 minutes Total: 20 minutes Serves: 6
Ingredients:
3 containers (5.3 ounces each) plain nonfat Greek yogurt
5 tablespoons honey
1 1/2 teaspoons grated lemon zest, plus
1 tablespoon juice
1 piece fresh ginger (about 2 inches)
1 papaya (1 pound), peeled, halved lengthwise, seeds discarded, cut into
1/2-inch cubes
1 package (6 ounces) fresh blackberries
1 package (6 ounces) fresh raspberries
1/4 cup chopped fresh mint, plus sprigs for garnish
1/2 cup granola
Directions:
In a small bowl combine yogurt, 3 tablespoons honey, and zest; set aside.
Using the large holes of a box grater, grate the ginger (no need to peel) into a small bowl.
