Grilled Veggie Appetizers
I found myself hosting a group with very diverse dietary needs and nutritional philosophies. Very tricky! How to come up with something indisputably health conscious, yet pretty and delicious?

Spring time is the beginning of full blown grilling season (i.e. summer). So here is a great recipe to kick things off.

Don't ask me where I found this recipe, I read it online somewhere and then adapted it from memory.
INGREDIENTS (all measurements are approximate)
2 cloves garlic, minced
1 large shallot, minced
1 large zucchini, ends cut off and cut in half lengthwise
1 large or two small yellow squash, ends cut off and cut in half lengthwise
1/2 large green pepper, sliced
1/2 large red pepper, sliced
1/2 red onion, sliced into thick rings
palmful parsley, chopped
2 tbsp olive oil
1/4 cup white wine
few splashes soy sauce
1/2 cup chicken or veggie broth (I used my own homemade veggie broth but any broth is fine)
Cooked spaghetti or linguine (we used wheat pasta because we are dieting)
salt and pepper
PREPARATION
Grill the zucchini, yellow squash, peppers and onion until soft but not mushy. We used our Foreman grill because it's cold outside
When the veggies are done, cut them into bite-sized pieces.

Mini Philly Cheese Steak Crostini

1 1/2 pounds flank steak
2 tablespoons grill seasoning
Salt and freshly ground pepper
2 tablespoons extra-virgin olive oil, divided plus some for drizzling
2 large yellow onions, finely chopped
2 large red bell peppers, finely chopped
1 cup beef stock
2 crusty French baguette, sliced on an angle about 1/2-inch thick
2 cups shredded provolone cheese
Preheat a grill pan or an outdoor grill to medium-high heat and preheat oven to 400°F. Season the steak on both sides with salt, freshly ground pepper and grill seasoning. Drizzle with olive oil and brush to coat in the oil.Transfer the steak to the grill and cook on each side for about 5-6 minutes for medium rare.

There are a couple approaches made popular by The Sneaky Chef and Deceptively Delicious by Jessica Seinfeld. Whichever you use their concepts are the same – adding vegetables to your Child’s diet. I’ve used (and my sister with my 3-year-old nephew) some recipes.

Summer is right around the corner and nothing says summer like grilling. This fuss-free veggie dish can be prepared ahead and kept at room temperature before being tossed with the greens. The recipe contains quite a high percentage of calories from fat because of the olive oil, but the total calorie count is pretty low.
