Tomato Lentil Soup
adapted from the New Basics Cookbook
1 tablespoon olive oil
2 cups chopped onion
2 cups chopped celery
2 large cans Roma tomatoes (28 oz. each)
6 cups low sodium, non-fat chicken broth or veggie stock
2 cups dried lentils (rinsed)
1 cup chopped fresh Italian parsley
1 cup dry red wine
4 cloves garlic, finely minced
1/2 teaspoon ground pepper
1/2 teaspoon salt
1/4 teaspoon cloves
1/4 cup balsamic (or red wine vinegar)
Sauté onions and celery in olive oil in a large soup pot, for about 10 minutes.
Purée tomatoes with their juice in a blender or food processor, and add to veggies.
Add chicken (or veggie) stock and lentils. Bring to a boil.

Ingredients:
2 Tbs mild curry paste
1 can crushed tomatoes
3 cups chicken stock
1 large carrot, chopped finely
2 trimmed celery sticks, chopped finely
1 medium size potato, chopped finely
1 large zucchini, chopped finely
3/4 cup red lentils
1/2 frozen peas
1/3 cup coconut milk
2 Tbs coarsely chopped cilantro
Method:
Cook curry paste in large heated saucepan, stirring until fragrant. Add undrained crushed tomatoes, stock, carrot, celery, potato and zucchini, bring to boil. Reduce heat; simmer, covered for 5 minutes.

My mother is a reader of Woman's Day Magazine (whose recipes I usually love) and she passed on these 2 ingredient recipe cards to me. Sure, some of them are a little odd and I will probably never, ever attempt, but there were a few that immediately grabbed my attention and I can't wait to try out! (Pineapple with coconut sorbet...:DROOL:)

I just found this blog and thought it was a great idea to share! If nothing else, most of the meals can be made at the last minute, so they're perfect for those nights where you just can't make up your mind what you want to make. And they're good for those times you need to stretch your budget a little bit!
