Very delicious for a light snack/meal.
One La Tortilla Factory Tortilla (Whole Wheat, Green Onion, Regular; small and large sizes avaliable)
A slice or two of Kraft Fat Free American Singles (Or any Mexican cheese you would like!)
Chicken breast chunks
Any kind of hot sauce or salsa
Just place chicken and cheese in the tortilla and fry in a pan on both sides (folded!) until cheese is melted and the tortilla is browned. Feel free to enjoy with sour cream or guacomole!

So many times it happens. You do SO well on your diet through out the week and splurge on the weekend. I think some people will be shocked the amount of calories in ONE drink, and who really stops at one?

This recipe, adapted from A Real American Breakfast by Cheryl Alters Jamison and Bill Jamison (William Morrow), will give you the energy to get through even the busiest morning. Providing an extra punch of protein (along with eggs) is lean machaca, a beef filling borrowed from Mexican ranchers.

Ingredients:
1 1/2 tablespoons vegetable oil
1/2 medium onion, chopped
1 red or green bell pepper, seeded, cored and chopped
1 1/2 lb thickly sliced lean deli roast beef, cut into matchsticks (or a 15-oz can black or pinto beans, drained, for machaca for a nonmeat protein)
3/4 cup lowfat, low-sodium chicken, beef or vegetable broth
2 cups bottled tomato salsa
1 cinnamon stick
1 large egg plus
1 large egg white, whisked lightly
6 thin flour tortillas, warmed
Directions:
To make machaca, heat oil in a skillet on medium heat.

This recipe supplies half of your daily folate needs. Also, the cabbage used in this recipe is savoy cabbage. It is light green and has crinkly leaves.
