Frozen Burrito Casserole
This is so quick and easy! Put frozen burritos (I can usually put 7 – 8 burritos in there) in a 9x13” pan. (You can buy a large back of them in the frozen food section of the grocery store.) Top with a big can of enchilada sauce (red or green) or even salsa – whatever you have on hand.

I was a latecomer to the wonderful world of grilled cheese. When I was younger, I didn't eat much cheese, due to apparent insanity, and when I got a little older, I honestly thought that you couldn't make grilled cheese without using American cheese.
Sooooo not a fan of American cheese.

Lately I have been seeing a lot of recipes on here that call for 'enchilada' sauce. I have been trying to find a canned version but have had no such luck. So, I was checking out recipes and happened across an enchilada recipe!

Grilled Quesadillas
From PartySugar
1 cup shredded cooked chicken*
1 cup grilled steak, sliced into 1/2 inch cubes*
1 cup roasted red peppers
1 cup chopped tomatoes
1 cup chopped black olives
1 cup chopped green onions
1/4 cup chopped cilantro
1 cup Monterey Jack cheese, grated
1 cup pepper jack cheese, grated
14 tortillas
for toppings
salsa
sour cream
guacamole
Mark each tortilla with guests initials.Using the fillings, assemble quesadillas to your liking.Preheat your grill to low heat.Place the quesadillas on the grill and cook until grill marks are present and the quesadilla turns golden brown, about 5-7 minutes. The inside should be warm and the cheese should be melted. Once finished cooking, remove the quesadilla from the grill, cut into 6 wedges, and serve with your favorite salsa, guacamole, and sour cream.
Makes 7 quesadillas.

Heart Healthy Sour Cream Chicken Enchiladas
Create this mouthwatering favorite with the leftover rotisserie chicken or other cooked chicken. Serve with black beans and steamed rice and guacamole salad.
1 1/4 cups low-sodium chicken broth
1 tablespoon plus 1 teaspoon cornstarch
1/2 teaspoon ground cumin
1/8 teaspoon black pepper
12 6-inch corn tortillas
12 oz cooked skinless chicken breast, chopped (about 3 cups)
4 oz fat-free cream cheese
1/2 cup salsa
Canola cooking spray
1/4 cup nonfat sour cream
1 lime, freshly squeezed
Chili powder, to taste
Extra salsa, for garnish
Fresh cilantro, for garnish
In a small saucepan, whisk together the chicken broth, cornstarch, cumin, and black pepper.

I don't know if it's because the weather is getting cooler or what but I've been craving comfort foods that remind me of my mom's cooking. This is one that takes me back.
Chile Relleno Casserole
10-12 fresh roasted chilies (you can substitute for canned chili)
1 lb ground beef
1 small onion, chopped
3 eggs
1/2 cup milk
1 cup Monterrey Jack cheese
1 cup medium Cheddar
1/2 teaspoon cumin
1/2 teaspoon pepper
1/2 teaspoon salt
Optional:
Tomato and lettuce
Sour cream
Brown ground beef and drain the fat.
