TeamSugar member MyOpinion (http://teamsugar.com/user/My+Opinion) has asked a favor of all of you (and me)! She's hoping to put together a gift basket for her sister, to thank her for all that she's done and really show her how much she's appreciated and loved.
Here's more of the story:
"Do you have any ideas on a gift basket for someone who constantly cares for another?

Frozen Burrito Casserole
This is so quick and easy! Put frozen burritos (I can usually put 7 – 8 burritos in there) in a 9x13” pan. (You can buy a large back of them in the frozen food section of the grocery store.) Top with a big can of enchilada sauce (red or green) or even salsa – whatever you have on hand.

I just read this recipe on Dr. Weill's website and thought it sounded great. I am going to make it once I go grocery shopping next week!

We're having friends over for dinner this weekend and are considering making a big Mexican feast. But our Mexican culinary knowledge doesn't go far beyond tacos, fajitas, and black bean soup.
Do any of you have any good Mexican recipes to share?

I was a latecomer to the wonderful world of grilled cheese. When I was younger, I didn't eat much cheese, due to apparent insanity, and when I got a little older, I honestly thought that you couldn't make grilled cheese without using American cheese.
Sooooo not a fan of American cheese.

Lately I have been seeing a lot of recipes on here that call for 'enchilada' sauce. I have been trying to find a canned version but have had no such luck. So, I was checking out recipes and happened across an enchilada recipe!

Yum posted a recipe a few months ago and they were awesome. But since I couldn't find hers... I'll post one that is similar.
