Last weekend I was feeling pretty stressed out for some reason... and when I'm stressed, I feel the need to cook just about ANYTHING.
Since I haven't baked any cookies for a while (went cake crazy) I decided cookies it is!

Moravian Spice Cookie Waffers

This cookie comes to us from North Carolina by way of Central Europe; it's a classic, peppery spice cookie brought to the U.S. by Moravians in the 1700s. The key to this cookie is rolling it super-thin to get that characteristic snap; it's a lot easier to roll it that thin between waxed paper.

First of all, I'm going to fess up and say that the cookies came out a bit dry and lacked a great peanut butter flavor. However that is definitely because of the peanut butter I used. I opted for an organic, all-natural peanut butter that did not bring nearly enough oil/fat or flavor to the party.

INGREDIENTS
1 cup canned pumpkin
1 cup white sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
2 cups semisweet chocolate chips
1/2 cup chopped walnuts (optional)
DIRECTIONS
Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in.

These cookies are from Germany and usually known as the black & white cookie. This recipe has been in the family for awhile so I don't know where it came from. I googled them though and you can find alternates that are very similar.

My 8 year daughter was recently given a gift from her friend called Yummy Dough. Last night we finally tried it. It is this great new product where kids can make their own dough, mix the colors and knead to form a molding dough which they can also bake and eat after. Not only is it a dough that it is safe to eat before baking unlike something like Playdoh, it actually tastes pretty good, like a sugar cookie.
