My mother is a reader of Woman's Day Magazine (whose recipes I usually love) and she passed on these 2 ingredient recipe cards to me. Sure, some of them are a little odd and I will probably never, ever attempt, but there were a few that immediately grabbed my attention and I can't wait to try out! (Pineapple with coconut sorbet...:DROOL:)

Marinate mixed olives (jar) with freshly grated peel and juice from 1 lemon in refrigerator at least 24 hours.

These spices can be combined in amounts to make specific spice mixtures used in everyday cooking. A very well known spice mixture is the Garam Masala. The word garam means hot, not "hot" as in spicy chili hot, but due to the fact that the spices blended in the mixture are said to increase the body temperature.

My boyfriend and I decided to cook something together on Valentine's Day (I normally do the cooking, he takes care of the dishes!) and we ended up making a very popular (but basic) dish from his native Finland. Makaroonilaatikko is very easy to make and only requires four ingredients (eggs, milk, macaroni, ground beef) if you follow the recipe, but since Finnish cooking isn't the most tasteful, we modified it a bit by adding a few things. Here's our improved recipe:
Recipe:
- 1 package whole wheat macaroni (400g or 14oz)
- 1 red onion, halved, then thinly sliced
- 2 garlic cloves, minced
- 1 lb ground beef
- meat of 2 Italian sausages
- 1 liter milk
- 4 eggs
- 1 cup Parmesan cheese, finely grated, + more for serving
Preheat oven to 350°F.

I got this recipe from my mother. I made it today and will post pics tomorrow. It is in the fridge now "pickling" because it is better after a day.

These are so easy to make and if you'd rather, you can use taco shells or flour tortillas. I think the avocado dressing really makes it stand out!
Avocado Dressing:
3 Tbs vegetable oil
2 Tbs cider vinegar
2 tsp minced pickled jalapeno peppers
1/2 tsp sugar
1/2 tsp salt
1 avocado, peeled, pitted and chopped
1 tomato, chopped
2 Tbs vegetable oil
1 clove garlic, minced
2 1/2 lbs chicken breasts, cooked, boned, skinned and shredded (I cut them into cubes and saute in a little olive oil, or I grill them first in the Summertime).

Ok so you may want to eat this BEFORE the diet starts on Tuesday as it is VERY RICH and fattening. It takes some time but if you have a mini chopper it helps ALOT. This is the perfect meal to do for a dinner party because everything can be done a day ahead and then reheated for the party.
