My mother is a reader of Woman's Day Magazine (whose recipes I usually love) and she passed on these 2 ingredient recipe cards to me. Sure, some of them are a little odd and I will probably never, ever attempt, but there were a few that immediately grabbed my attention and I can't wait to try out! (Pineapple with coconut sorbet...:DROOL:)

Key lime cupcake recipe-
1/2 cup butter, softened
1 cup white sugar
2 eggs
2 teaspoons grated key lime zest
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup key lime juice
Cream together the butter or margarine and 1 cup sugar. Beat until light and fluffy. Separate the eggs.

I had dessert duty for a get together this weekend and I found this recipe from Better Homes and Gardens. It sounded strange using shredded sweet potatoes, but I thought it turned out great and was big hit. It is for a 3-layer cake, but I only had 2 9" round pans, so I made the two rounds and poured the extra batter into a loaf pan.

It was Nat'l Cheesecake Day yesterday (which happens to be my FAVE dessert) so my boyfriend and I went out to eat at The Cheesecake Factory. He bought me my fave cheesecake with my fave pineapple upside down shot!

Maybe its just the kid in me, but how cool are these sorbets? The sorbet is actually in a real fruit shell! Over the past week, Ive had a few of these and they are deliciously good.
