If anyone asked me what my favorite food was growing up, my answer was always the same thing:
Mashed potatoes.
Now that I'm a little older, my tastes have expanded, but I will still admit that there's nothing like Grandma's homemade mashed potatoes. But I'm also a potato fiend.

This soup is very soothing for dinner during winter.
Its full of delicious combinations, sweet and creamy from the sweet potato and carrots and chickpeas to finish off the pleasurable taste and texture.
The spices just add in that touch of magic the soup needs for those innocent punchy flavors.

January is national soup month! I love soups, soups are best made for dinner and served hot off the stove. In memory of colormesticky's request under YumSugar's National Soup Month post I decided to post my potato cheese soup I made for dinner last night, my mom loved the soup so much she told me that I should study on being a pro chef!

What you need:
10 potatoes, washed and peeled
1 large leek
1 onion
3 carrots
1 clove minced garlic
1 32 oz container of veggie broth (or 2 bouillon cubes and 4 cups of water)
1 - 2 cups water (or as much as needed)
1 cup fresh or frozen corn kernels
Food processor
Salt and pepper to taste
What you do:
Pour the broth into a pot and heat on high.
Now wash and chop the leek and onion and place them in the broth. Add in the minced garlic too.
Cut the potatoes in eighths and carefully place them in the broth. You don't need to waste time cutting them smaller since you'll be mashing them with the food processor after they're cooked.
