Since the challenges atoxicsparkle has been running in her wonderful Beauty Product Junkies group have been so fun, it seemed like a good idea to try out a recipe challenge!
Since it's really starting to warm up (in most places), let's start out with a challenge for light and cold recipes. Let's see your best salads, pastas and generally cucumber-cool dishes, ladies!

So, I'm sure there's some super-specialized place on the internet that could answer this question for me, but what I want to know is how many of you ladies have a rice cooker, and what else do you do with it?
I just finally got one tonight and made some fantastic, perfectly cooked brown rice. I've been wanting one forever, because I'm so easily distracted I always wander away from the stove and accidentally let my rice burn. (Or I put in too much water.) I know, set a timer, I'm just ADD in the kitchen, I hear the timer, taste the rice, and wander away again, thinking to myself, "I'll go check on it in a minute...". And it seems like every time it takes a different amount of time to get to the right consistency, 25 minutes, 30 minutes, 35 minutes... Easier to pony up the thirty bucks for the appliance than to try and change my behavior to become patient enough to deal, you know? Plus, honestly, the first batch of rice we made was so tasty, it's better than anything we've made on the stove, I don't know why.

Hey Kitchen Goddesses! I was making chocolate cheesecake last night. The recipe called for a 10-inch spring form pan, but the one I own is a 9-inch pan.

Thanksgiving guests will enjoy clever edible pumpkins, whether served as an appetizer or used as a garnish. What a treat!

Start to Finish:30 min
Makes:8 pumpkins
Ingredients
8 tablespoons smoked Cheddar cold pack cheese food (from 8-oz container), well chilled
2 teaspoons finely chopped peanuts
4 butter-flavored pretzel spindles or sticks, broken in half
16 tiny pieces fresh parsley leaves
Directions
Line small serving plate with waxed paper.

Pot Stickers - an amazing appetizer!
I just learned to make Pot Stickers and I'm blown away at how good they are, and how easy to make! This is an amazing appetizer and they're just as good the next day - so you can have them all made ahead of time.

This is one of my favorite pasta recipes! It'll blow your guests away, because it's delicious, but it's really easy to prepare!
Every time I make this, it's a little different and I never know how much I use of everything.

I got this dish from Ediets.com when I used to be a member- so that means it's healthy! It's easy to make and super yummy! This is a portion for 1, so adjust accordingly.

Chocolate Mud Cake made in a slow cooker.
INGREDIENTS:
1 cup all-purpose flour
2 teaspoons baking powder
6 tablespoons butter
2 ounces semisweet chocolate (or 1/3 cup chocolate chips)
2/3 plus 1/3 cup sugar
3 tablespoons plus 1/3 cup Dutch-processed cocoa
1 tablespoon vanilla extract
1/4 teaspoon salt
1/3 cup milk
1 egg yolk
1/3 cup brown sugar
11/2 cups hot water
Whipped cream or ice cream
1. Coat the inside of a 2 1/2- to 5-quart slow cooker with cooking spray.
